I can’t believe it’s already August! This summer has flown by. I moved to Michigan in May to start a new job as I waited for my boyfriend to join me – He’s starting physical therapy school here in a couple of weeks but stayed in St. Louis for the summer to work and save a little money before starting school. This will be a second career for my boyfriend, and I couldn’t be prouder of him for getting into PT school!
This past weekend, he finally moved up here, and since I had missed his birthday last week while he was still in St. Louis, we celebrated with sushi on Saturday night and gym memberships on Monday. We spent Sunday shopping for groceries and cold-weather clothes (since both of our wardrobes are lacking the Michigander essentials!). After our busy day of shopping, we relaxed with stuffed acorn squash paired with a light spinach salad topped with nectarines, blueberries, and raspberry vinaigrette.
I am a huge fan of easy, fancy salads that look like they took much longer to create than they actually did. Colorful salads are a great way to dress up a weeknight meal or a meal with friends. And I just used a store-bought raspberry vinaigrette to drizzle on my salad, but feel free to make your own, as well. I’m just super lazy and know that I’m more likely to eat a salad if I make it as easy as possible for me:)
Nectarine & Blueberry Spinach Side Salad
5 cups baby spinach
1/2 nectarine, sliced
1/8 cup blueberries
2 Tbsp almond slivers
2 Tbsp feta cheese
1. Add spinach to a bowl and top with nectarine, blueberries, almonds, and feta.
2. Drizzle raspberry vinaigrette on salad.
